Don't know if this answers your question. Keep in mind I am no engineer.

My GUESS is the bubble wrap design is just a way to trap heated air. Down is an incredibly good insulator because it excels at trapping body warmth. Same with the hollow hair on deer elk moose etc. They all retain warmth great because they trap body warmth in the hollow air filled space.

The 'bubble wrap' holds the warm air in place in a similar fashion.
